These casseroles have come in handy when company comes. I hope you enjoy these offerings: chuckwagon casserole, ham and broccoli and my favorite; shrimp and green noodle casserole. Enjoy!


Chuckwagon Casserole


2 pounds ground beef


1 large onion, chopped


1/4 teaspoon garlic salt


1 can chicken and rice soup


1 can mushroom soup


2 cans tortilla soup


1 small can green chilies, chopped


1 small can tomato paste


8 oz. package grated cheese


1 small package long spaghetti, cooked and drained


Brown the 2 pounds ground beef and onion and garlic salt. Drain off fat. Mix all the soups, green chilies and tomato paste. Add ground beef, then spaghetti, pour into 9 by 13 lightly greased casserole. Top with grated cheese. Heat in oven at 350 degrees for 15 to 20 minutes until hot and cheese is melted. Serves 8, freezes well.


Ham and Broccoli Casserole


Slices of baked ham to cover a buttered 8 by 11 dish ( about 3 to 4 large slices , cut in strips )


2 packages frozen broccoli spears, cooked and drained


2 Tablespoons butter


2 Tablespoons flour


1 1/2 cups hot milk


Nutmeg , dash


8 oz. Mozzarella cheese slices, divided


3/4 cup buttered bread crumbs


1/4 cup toasted almonds


Salt and pepper to taste


Line the buttered casserole dish with the ham strips. Cover ham with cooked broccoli. Make white sauce by using small saucepan; add butter, melt and add flour and cook 2 minutes, stirring constantly. Add milk all at once and stir until bubbly. Remove from heat and add seasonings and 1/3 of the cheese. Cheese may be cut into small pieces for this step. Pour sauce over broccoli. Top with remaining cheese, bread crumbs and almonds. Bake at 350 degrees for 30 to 35 minutes. Serves 4 to 6 . I have added 1/4 cup of finely chopped onions; really taste good.


Shrimp and Green Noodle Casserole


1 package green noodles


1 bunch green onions, chopped fine


3 pounds shrimp, cooked and cleaned ( to save time , buy already cooked shrimp )


1 cup mayonnaise


1 cup sour cream


1 can cream of mushroom soup


2 Tablespoons prepared mustard


2 eggs, beaten


1 cup sharp cheese, grated


1/2 cup melted butter


Cook noodles and drain. While still hot, toss with green onions. Place in a buttered casserole 9 by 13; top with shrimp. Make the following sauce: combine mayonnaise, sour cream, soup , mustard , and eggs. Cover the shrimp layer with this sauce. Then combine cheese and melted butter. Pour over the layer of sauce and bake at 350 degrees for 30 minutes. Serves 8. Can be cut in half.
